Temperature control turns back to the ice age

Scotsman Ice Systems the world brand leaders in ice making equipment are offering food processors a new and environmentally friendly way to control temperatures in the production process by turning back to the ice age.

Before expensive and energy consuming refrigeration equipment was invented, flaked ice was the traditional way to control temperature when processing foodstuffs or drinks. Now, with the emphasis firmly on ‘green’ solutions manufacturers are increasingly turning to tried and trusted methods of cooling.

Scotsman Flake or Scale ice is used in a variety of food processing environments, including Bakeries, Pasta production – for cooling, Fish and Meat and Poultry processing. In the Bakery sector continuous temperature control of dough mix is essential for product quality and yield. Maintaining a temperature delivers predictable product volume and weight, ensuring better consistency and taste. The process also leads to more efficient production with less wastage, machinery downtime and weighing and packing errors. Ice is a simple, efficient and adaptable way of controlling dough temperature by combining as one of the ingredients.

In a further 'Green' move, Scotsman Ice Systems announced the launch of its first high efficiency CO2 Ice Flaker based on its popular MF 58 Split model in 2010. The system having been successfully trialled in Toulouse, south of France in conjunction with one of Europe's leading environmentally aware supermarket chains, the Carrefour Group.

The CO2 Scotsman MF58 Split system offers an 16% increased production capacity, compared to a traditional MF58 using HFC refrigerant, of up to 700 Kg/24 hrs of high quality flake ice extruded at a temperature just below zero degrees. Flake Ice offers the best solution for maintaining refrigerated perishables where long-lasting freshness, and natural appearance need to be guaranteed and is ideal for Supermarket displays.

The CO2 Scotsman MF58 Split system is highly flexible and can be incorporated with a range of flaked ice delivery carts or automated delivery systems and storage bins.

Scotsman Ice machines manufacture ice in a variety of thickness: The ice ranges from 1.5 mm, as preferred by the bakery and meat processing industries, to 3 mm. as demanded by the fishing industry, to best suit processing and transport requirements.

Scotsman offers two types of ice for food processing uses, Scale ice, a sub-cooled ice where the temperature range of the ice scales may vary between - 6°C & - 12°C and Flake ice which is extruded at a temperature just below zero degrees and available in two different levels of moisture, with superflake having the driest and most compressed individual flakes of ice.

Supermarket specialists use Scale Ice to prepare a layer of scale and flake ice on fish and seafood displays. The result is a combined effect of longer lasting freshness and natural appearance of the fresh food, with slower ice melt than with flake ice.

Scotsman scale ice machines are available in both fresh and saltwater variants for both ice formation and as a coolant.

Scotsman Salt-Water units are purposely designed to cope with the rigours of on-board life.

However, flake ice offers the best solution for maintaining refrigerated and moisturised perishables where long-lasting freshness, and natural appearance need to be guaranteed.

The Scotsman ice making system is based on a flooded stainless steel evaporator which maximises heat exchange between refrigerant and water and, which can be accurately controlled and monitored.

Formed ice is then forced under pressure through the Scotsman bronze icebreaker, which removes excess humidity from the ice flakes. This proven technology is acknowledged as the best guarantee of constant ice quality and long lasting, reliable operation.
